2/3 cup breadcrumbs
3/4 cup grated Parmesan cheese
6 T. butter melted
1 tsp. salt
1/2 cup chopped onion
2 cups cooked turkey or chicken, cubed
1 cup frozen peas, thawed
3 3/4 cup chicken stock
6 T. flour
2 tsp. lemon juice
1/2 tsp. thyme
pepper
1/2 lb curly egg noodles, cooked according to package directions

Preheat oven to 425º

In a bowl, combine breadcrumbs, 1/4 cup cheese and 3 T. butter. Season with salt and set aside.

In a medium sauce pan melt 1 T. butter, add onions and cook covered for 2 minutes. Remove lid and cook 2 more minutes, stirring often. Transfer to a bowl and add turkey/chicken and peas. In same pan, whisk stock, remaining butter and flour. Bring to a boil; reduce heat to a simmer. Whisk until thick, 4 to 5 minutes. Remove from heat; stir in lemon juice, thyme and remaining 1/2 cup cheese. Season with salt and pepper.

Combine sauce, turkey and noodles in 9 x 13 baking dish; top with breadcrumbs. Bake for 15 minutes.
