12 - 20 lb. turkey
Salt water

Butter
Water
GRAVY: giblets with 1 stalk celery
1 bouillons cube
Flour and water as needed.

Directions:
Directions:
Soak thawed turkey in cold salt-water for 2-3 hours. Drain. Salt interior cavity (2-3 tsp.). Melt butter and rub down breast very good. Place breast side down and brush back and wings with melted butter. Place 1 cup (or so) of water in bottom of roaster. Bake 1 hr. at 375º. Finish backing at 325º until done. Total time for 12 lb. turkey = 4 hours approx. Total time for 20 lb. turkey = 6 - 6 1/2 hours.
GRAVY: Cook giblets with 1 stalk celery. Use this broth + turkey broth + (flour and water paste) + bouillon cube. Cook until thick.

Soaking in salt-water takes out the "frozen" taste of turkey according to mom.
