1 1/2 c. uncooked rotini (spiral pasta)
1/4 c. vegetable oil
1 c. broccoli florets
1 c. thinly sliced zucchini
1 c. fresh or frozen asparagus (cut into 1" pieces)
1 c. sliced mushrooms
1/2 c. chopped onions
2 c. cherry tomatoes, each cut in half
2 T. minced parsley
1/2 bottle creamy Italian dressing
1/2 c. grated Parmesan cheese
1/4 c. milk

Directions:
Directions:
Cook pasta; drain well. Meanwhile, saute broccoli, zucchini, asparagus, mushrooms and onions in vegetable oil until tender but not browned. Add tomatoes and parsley; simmer about 5 minutes.
Combine dressing, cheese and milk in small bowl and mix until smooth. Combine pasta, vegetable mixture and dressing in large serving bowl; toss lightly until ingredients are blended. Serve warm and garnish with parsley and Parmesan, if desired.

OPTION: Add ham or smoked turkey
