Mandarin Tossed Salad Recipe

1/2 c. head lettuce, shredded
1 c. celery, chopped
1 T. parsley, minced
2 green onions and tops, chopped
1 can mandarin oranges, drained
1/4 c. carmelized sliced almonds

1/2 t. salt
1/4 c. salad oil
2 T. vinegar
2 T. sugar
dash black pepper

Combine all salad ingredients. Chill until ready to serve. In jar combine all dressing ingredients and shake. Pour over salad JUST before serving.

Carmelized Almonds: In saucepan, add 2 T. sugar and almonds and cook over low heat, stirring constantly. The sugar will melt and collect on the almonds. Cool.
