2 Tbs. vegetable oil, divided use
4 corn tortillas, preferably stale, torn into approx 1" pieces
1 minced jalepeno or serrano
1 Tbs finely diced white onion
4 eggs, whisked
salsa or hot sauce (like Cholula), for serving

Directions:
Directions:
Heat 1 tablespoon oil in large skillet over medium heat until almost smoking. Add tortillas and stir until they are crisp but not burned. Remove tortillas and reserve. Add remaining 1 Tbs oil to pan. When oil is hot, add jalapenos and onion and saute until soft. Add tortillas and stir for about 1 minute to heat them. Add eggs and stir until eggs are cooked. Serve with salsa on the side.
