2 cups flour
1 cup vegetable oil
1 tsp. salt
1 cup hot coffee (I use instant decaf)
1 tsp. baking powder
1 cup milk
2 tsp. baking soda
2 eggs
¾ cup unsweetened cocoa
1 tsp. vanilla
2 cups sugar

Directions:
Directions:
1. Sift together dry ingredients in a large mixing bowl.
2. Add oil, coffee, and milk.
3. Mix all at medium speed 2 minutes.
4. Add vanilla and eggs.
5. Beat 2 more minutes. Batter will be thin.
6. Pour into 2 greased and floured 9 in. x 1 ½ in. cake pans or 2 8 in. pans and 6 muffin cups.
7. Bake at 325 degrees for 25-30 minutes.
8. Cool 15 minutes before removing from pans.
9. Cool on wire racks.
