1 large bag (40 to 60 oz.) frozen hash brown potatoes
1 1/2 pints heavy whipping cream
1 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon pepper
Cooking spray

Directions:
Directions:
Spray 9 x 13 inch pan. Pour enough frozen potatoes into pan to almost full, may have some left over. Pour on heavy whipping (not whipped) cream. Add salt and pepper. Sprinkle with Parmesan cheese. Cover with aluminum foil. Bake 1 hour at 350º. Uncover pan for the last 20 minutes until the mixture turns golden brown.

I sometimes thaw the potatoes using a microwave and have doubled the recipe and then used a turkey roaster for baking.
