2 cups grated zucchini
1 cup chopped walnuts
4 eggs
2 cups sugar
1 cup vegetable oil
3 1/2 cups unsifted flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon vanilla
1 cup raisins
1 cut crushed pineapple, drained
1/4 cup powdered sugar

Directions:
Directions:
Heat oven to 350º. Beat eggs. Gradually add sugar and oil. Combine dry ingredients blending alternately with zucchini. Stir in nuts, raisins, pineapple, and vanilla. Grease and flour two loaf pans. Pour mixture into pans and place in oven on the lowest rack. Bake for 55 minutes. Once cook, dust tops with powdered sugar. Provides 2 loaves.
