2 T olive oil, divided
1 lb. chicken strips
3 lg. shallots finely diced
1/2 c finely chopped red onion
2 1/2 t. curry powder
1/4 t. crushed red pepper
1/2 t. salt
1 lg. sweet potato, peeled and diced into 1/2 " pieces
1 can 14 oz. lite coconut milk
2 green onions, thinly chopped
2 T. chopped fresh cilantro

Heat 1 T oil in large pan over medium-high heat. Season chicken with salt and pepper and saute for 7 minutes or until no longer pink. Remove chicken from pan and cover to keep warm. Add remaining oil to same pan and saute shallots and onion for 5 minutes. Sprinkle in spices and salt. Add potatoes and coconut milk and bring to a boil. Cover and reduce heat on medium low. Simmer 10 minutes. While potatoes are simmering, chop the chicken into bite size pieces. Add chicken to the curry and simmer 5 more minutes, until potatoes are cooked. Top with cilantro and green onion. Serve in bowl.
