1-2 Tlb Mrs. Savoies Roux in a jar
1 chicken, cut up
1 pkg. sausage ( I prefer Polks original)
3-4 onions chopped
3 bell peppers chopped
most of a whole celery stalk chopped
6 garlic cloves chopped
1/2 inch oil in fry pan
Tony Chachere's Creole Seasoning
12-24 whole and/or chopped okra
1 T. pure ground Gumbo File

Directions:
Saute veggies (not the okra) in oil. If you prefer, you can put a brown on the chicken and sausage.
Add chicken and veggies in a large pot. Add the jarred roux slowly and in small pieces. I suggest that you either make your own roux or use only Mrs Savoies.
Add 1-2 qts. water. Simmer 3 hours.
Add the okra about 1 hour into simmerIing. Add the gumbo file now. This helps remove the slime from the okra. Or dry the okra in a low and slow oven while you saute the veggies
After about 2 1/2 hours, you can add any seafood if you like. (oysters, shrimp, crawfish )
Serve over rice.
