6 small zucchini
1 c finely chopped fresh basil
1 8oz pkg Ricotta cheese
1/2 c chopped fresh parsley
1/2 c freshly grated Parmesan cheese
2 T hot water
11/2 T fresh lemon juice
1/2 t salt
1/2 t pepper
cooking spray

Directions:
Directions:
Preheat oven to 425º
Cut each zucchini in half and scoop out pulp, leaving 1/4" thick shell. Arrange zucchini shells in a 9x13 greased baking dish. Combine remaining ingredients, stirring well to combine. Divide mixture evenly among shells. Bake at 425º for 25 minutes, or until tender.
