1/2 lb. boneless skinless chicken (breasts recommended), cubed
1/2 lb. smoked sausage, sliced
1/2 lb. small or medium shrimp, peeled and deveined
1 small onion, chopped
1/2 large bell pepper, chopped
1 5-oz. pkg. yellow rice
1-2/3 cups chicken stock
2 tbs. butter, margarine or oil, divided
1 cup frozen peas
1 medium tomato, seeded and chopped
seasoned salt, garlic powder and pepper to taste

In large pan, preheat 1 tbs. oil over medium heat. Season chicken to taste with seasoned salt, garlic powder and pepper. Add onion and bell pepper to pan and cook for 1 minute. Add chicken to pan and cook for 2-3 minutes. Add sausage to pan and cook for 2-3 minutes. Add oil, rice mix, cook for 30 seconds. Add chicken stock and frozen peas and bring to boil, then cover and reduce to a simmer. Simmer for 10 minutes. Season shrimp to taste with seasoned salt and pepper. Add chopped tomato and shrimp. Simmer for an additional 10 minutes, or until shrimp are curled and pink and the rice is tender. Stir to mix and serve immediately.

If I'm cooking and only using half a bell pepper, I will pull the seeds and ribs out and put the rest in the freezer in a bag. I'll just pull it out and use it straight from the freezer in heated recipes and I do not notice a difference in quality. (Thanks Mama and Granny for that tip!) Feel free to change the proportions of the meats, or to leave certain meats out altogether (I don't always do this with shrimp and have done this before with all chicken). Enjoy!
