1 c. grits
4 c. boiling water
1 tsp. salt
1-1/2 c. grated cheese
2 eggs
1/2 c. butter

Directions:
Directions:
Stir grits into saucepan of boiling salted water. Cook and stir till boiling. Cover, reduce heat to low and continue cooking 5-6 minutes
stirring occasionally. Add 1.5 cups of grated cheese and half cup of butter or margarine. Beat 2 eggs and add in. Pour into prepared baking dish and bake 30 mins. Let stand 10 minutes before serving.

For those of you who are lactose intolerant like me, substitute soy cheese and olive oil for butter or margarine. It tastes great! You can also change the proportions depending on how many you want to serve. Enjoy!
