5 Tablespoons flour
¼ cup unsweetened cocoa powder
½ cup sugar
¼ cup sugar
¼ cup butter, softened
1 cup milk
4 eggs, separated
2 Tablespoons Myers Rum
2 Tablespoons powdered sugar
2 cups chocolate rum custard

Directions:
Directions:
Sift flour, cocoa and 3 tablespoons sugar together in a small bowl; add butter. Mix until smooth paste is formed; set aside. Place milk and pinch salt in medium saucepan; bring to a boil over medium heat. Whisk cocoa paste into milk; continue cooking until thickened, whisking constantly. Remove from heat; place in medium bowl. Cool to lukewarm. Beat in egg yolks and run; mix well. Cool completely.

Heat oven to 350 degrees. Beat egg whites on high speed until foamy. Gradually beat in remaining sugar; continue beating until stiff peaks form and sugar is dissolved. Folk meringue into cocoa mixture. Pipe mixture into 6 (5 ounce) butter and sugared ramekins. Place soufflé dishes in baking pan; add ¼ inch water to pan. Bake 45 minutes or until set in center. Dust with powdered sugar. Serve immediately with warm chocolate rum custard.
