1 pound potatoes
4 sliced carrots
1 medium sliced zucchini
2 teaspoons olive oil
salt and pepper

Directions:

Scrub potatoes and cook in boiling water for 25 minutes. Add carrot slices for the last five minutes of cooking. Drain and cool. Slice the potatoes. Preheat oven to 400 degrees. Line a 9 inch pan with aluminum foil. Coat the foil with cooking spray. Layer the vegetables and drizzle each layer with oil, salt and pepper. Cover with foil and press down lightly with hands. Bake 35 minutes and then let stand for 5 minutes. Remove top foil and invert onto a serving plate. Cut into wedges.
