1 (17.3 oz) pkg frozen puff pastry, thawed
3 tbsp butter, divided
8 cups sliced peeled Granny Smith apples (8 medium)
1 1/3 cup water
2/3 cup sugar
½ cup dried cranberries
½ tsp ground cinnamon
2 tsp vanilla
8 scoops cinnamon ice cream
Powdered sugar

Heat oven to 400°F. With 4-inch leaf-shaped cookie cutter, cut 8 leaves from puff pastry; place 1 inch apart on 2 baking sheets. Bake, one sheet at a time, 10 to 15 minutes or until puffed and golden brown. Cool on wire rack.

Meanwhile, melt 1 tablespoon of the butter in large saucepan over medium-high heat. Cook apples 5 minutes or until crisp-tender, stirring frequently. Add water, sugar, cranberries and cinnamon. Reduce heat to medium-low; simmer 15 minutes or until apples are tender and mixture has thickened. Remove from heat; stir in remaining 2 tablespoons butter and vanilla until melted.

Spoon ½ cup warm apple compote onto each plate; place 1 scoop ice cream over apples. Angle leaf over ice cream; sprinkle with powdered sugar.
