6 eggs, 2 tbsp. light mayonnaise, 1 tsp. Dijon mustard, 1 tsp. white wine vinegar, 1 tsp. finely chopped chives, 3 to 4 drops of Hot pepper sauce (like tabasco), paprika, salt and pepper to taste.

Boil eggs 10 mins. Cool. peel. Cut into halves. Remove yolks. Mix yolks, mayonnaise, Dijon mustard, white wine vinegar, chives and hot sauce. salt and pepper to taste. Top with paprika.
