30 oz of hash brown potatoes, 1 stick plus 1 tbsp unsalted butter, 1 cup low fat sour cream, 1/2 cup heavy cream, 2 tsp. salt, 1 1/2 fresh ground pepper, 3/4 lb bacon (crumbled), 1 1/4 lb. reduced fat shredded cheddar cheese, 1/2 cup finely chopped green onion, 3 eggs

Preheat oven to 400º.

Brown bacon and crumble into pieces.

Mix potatoes, butter, sour cream, heavy cream, salt, pepper, green onion, eggs, bacon and cheese. mix thoroughly. Bake in a 9 X 13 inch pain for 35 to 40 mins.
