1 head of cauliflower (cut into florets), 2 c. heavy cream, 1/2 lb Monterey jack cheese (coarsely grated), 2 c. grated Parmesan, 6 oz. goat cheese (cut into small pieces), salt and pepper

Directions:
Directions:
Preheat oven to 400º.

Layer cauliflower, heavy cream and 3 cheeses in a medium casserole dish. Season with salt and pepper. Roast for 20 to 30 mins or until cauliflower is soft and sauce thickened. Remove from heat and let rest 10 mins.
