Mama Polly's Coconut Pie Recipe

2 cups milk
1 stick butter
1 cup sugar
1/2 cup flour
4 egg yolks
1 can or pkg. coconut
1 tbsp. vanilla

Directions:
Directions:
Pie: In a saucepan, put milk and butter; scald and set aside. Combine sugar and flour in a separate bowl, and mix well with a spoon. Add enough milk to dry ingredients to mix well, and then pour back into saucepan to cook. Separate the 4 eggs. Beat egg yolks with fork and add to the combined mixture. Continue to cook slowly until it reaches proper thickness; remove from heat and add coconut and vanilla.

Meringue & Pie Crust: See Mama Polly's Chocolate Pie (index). However, for this pie, once you have topped with meringue, sprinkle with a little coconut before browning.
