Mama Polly's Chocolate Pie Recipe

2 cups milk
1 stick butter
1 cup sugar
1/2 cup flour
3 heaping tbsp. cocoa
4 egg yolks

1 tbsp. vanilla

Meringue:
4 egg whites
4 to 5 tbsp. sugar
1/2 tsp. vanilla

Directions:
Directions:
Pie: Using a double boiler, add milk and butter; scald and set aside. Combine sugar, flour, and cocoa (I use 2 T regular and 1 T dark, but you can use all regular) in a separate bowl, and mix well with a spoon. Add enough milk to dry ingredients to mix well, and then pour back into saucepan to cook. Separate 4 eggs. Beat egg yolks with fork and add to the combined mixture. Continue to cook slowly for about 30 minutes; remove from heat and add vanilla.

Meringue & Pie Crust:
Use the Pillsbury pie crust in the red box, found in the butter section. Bake according to box instructions. You can also use Mama Polly's Pie Crust (index). For meringue, beat egg whites on high speed. When they start foaming, begin adding sugar gradually, 1 tbsp. at a time. Beat until stiff and peaks begin to form. Add 1/2 teaspoon vanilla. Add pie filling to baked crust. Top with meringue, and then bake at 325 or broil until light brown. Watch closely so as not to burn. Also, if you prefer, you can top Chocolate Pie with Cool Whip instead of meringue.

I remember Mama Polly teaching me to make her famous chocolate and coconut pies. I still have her handwritten recipe for both and will always cherish it.
