2 pounds frozen hash brown potatoes
1/4 cup melted butter
1 Tsp salt
1/4 Tsp pepper
1 cup chopped onion
1 can cream of chicken soup (10oz size)
1 cup sour cream
2 cups grated sharp cheddar cheese

Directions:
Directions:
Mix all ingredients together holding back 3/4 cup of cheese. Pour into a buttered casserole dish. Sprinkle the 3/4 cup of cheese on top. Bake at 350ºF for 45 to 60 minutes. This may be made ahead and frozen. Defrost before baking.
