Brown 1lb hot (or regular) sausage; put aside.
Using the drippings, saute 1 whole onion and either mushrooms or red potatos. Drain when onions are translucent.
In a pie dish: add sausage, onions and mushrooms/potatos.
Whisk 6 egg and 1/2 cup milk. Pour in pie dish.
...Grate cheese of your choosing over all. We like Hot pepper jack or Extra sharp cheddar.

Cook for 40 min at 350 degrees. Cut like a pie.
