2 1/2 c. flour
3/4 c. white sugar
3/4 c. brown sugar
3/4 c. vegetable oil
1 c. buttermilk
1/2 tsp. soda
1 tsp. baking powder
1 egg
1/2 tsp salt
1 tsp. vanilla
cinnamon
1/2 c. chopped pecans (optional)

Mix flour, sugars and oil together (will be lumpy). Save out 1 cup of this mixture for top. To the rest of mixture add buttermilk, soda, baking powder, salt, egg and vanilla - beat until smooth. Put in a 9 or 10 inch baking pan that has been greased and floured. Crumble the remaining mixture on top of batter and sprinkle with cinnamon. Add nuts to the topping mixture if desired. Bake 350 oven for 35 to 45 minutes (depends on oven). I test doneness with toothpick.
