Directions:Peel the green plantains.(Start by cutting off each pointy end and scoring on one side then peel under running water--this is to prevent staining your hands. Green plantains will not peel as easily as ripe ones. Hot water will also help the peeling process) Heat the oil. While the oil is heating up,cut the plaintains into 3/4 inch slices. Fry the slices in the hot oil for 3 minutes. They should be a light golden color and semi-soft. Remove the plantain slices with a slotted spoon and drain on paper towels.
Tip: Maintain the oil’s temperature.
When the plantain slices are cool enough to handle (about 1 minute), smash them into flat rounds. Quickly submerge in salted water with garlic. Fry the rounds in the hot oil for 3 minutes. They will turn crisp and golden brown. Remove the tostones with a slotted spoon and drain on paper towels. Salt to taste. |

Notes: Plantains are a staple in the Latin Caribbean diet. They are prepared many different ways, but tostones is the quickest and easiest. It’s a perfect recipe for beginners. You can serve the tostones immediately while they’re warm as a side dish or as a snack with garlic dip.
