1 bunch of fresh collard greens
2 tbsp. bacon grease
1 tbsp. sugar
6 oz. fatback or ham hock
1/2 tsp salt
1/4 tsp. pepper
1/4 baking soda
1 qt. water or chicken bouillon

Directions:
Directions:
Pull the leaves of the collard from the stems and discard. Coarsely chopped or tear the collards. Wash thoroughly in cold water and drain. In a large pot, combine the collards, bacon grease, sugar, fatback, salt, pepper, baking soda and water/chicken bouillon. Bring to boil, cook at a slow boil for 2 hours or until tender.
