Ingredients:  
Ingredients:  
1 16 oz. package of frozen sweet corn
2 small cans of sliced black olives
1 med red pepper, chopped
1 med red onion, chopped
5 garlic cloves, chopped
1 bunch of cilantro (remove stems), chopped
For the dressing:
1/2 c. olive oil
1/4 c. lemon juice
3 tbsp. white wine vinegar
1 tsp. dried oregano
1/2 tsp. salt (or to taste)
1/2 tsp. pepper (or to taste)
6 small avocados, diced (sprinkle with lemon to keep from browning too quickly)

Directions:
Directions:
Mix together all the veggies in a serving bowl.
Whisk together the dressing ingredients in a separate bowl.
Pour dressing over the mixed up veggies.
Just before serving add avocados and mix.
Serve with tortilla chips (Scoops work the best).
