Noodles:
1 lb lasagna noodles

Filling:
1 lb ricotta cheese (cottage cheese can be substituted)
1 lb mozzarella cheese shredded
2 tsp oregano
2 eggs lightly beaten
1 c Parmesan cheese grated

Sauce:
1 lb sweet or hot Italian sausage (ground beef can be substituted)
1 - 24 oz jar Italian Spaghetti Sauce (Ragu or Prego)

Topping:
1/2 c mozzarella cheese shredded
1/2 c Parmesan cheese grated

Directions:
Noodles: Cook lasagna noodles in salted water (with small amount of olive oil added to keep noodles from sticking together, drain well.

Sauce: Brown meat, drain, and mix with Spaghetti Sauce.

Filling: Mix cheeses, eggs, and oregano and set aside until needed.

Assemble lasagna by placing small amount of meat sauce in bottom of 9X13" baking pan; top with layer of 1/3 noodles, 1/3 of meat sauce, l/3 of cheese mixture. Repeat this order for two more layers, ending with the cheese layer. Top with shredded mozzarella cheese and grated Parmesan cheese. This dish can be made the night before and baked at 325-350º if it has been refrigerated. Bake approximately 1 hour if it is as room temperature. Bake uncovered.
