4 c. all purpose flour
1 tbsp. baking powder
1 tbsp. salt
4 tbsp. butter, cold
1 c. solid shortening, cold
2 cups milk

Preheat oven to 400.

In a large bowl, combine all flour, baking powder, and salt. mix well. Add 2 tbsp. of cold butter and cold shortening. Work into dry ingredients using your hands until the mixture resembles coarse crumbs. Stir in milk. Dough will be sticky. Dust your hands with flour. Turn dough on floured surface. Fold each side into the center. pick up dough and add additional flour to the surface. Fold toward the center. turn and press into 1 inch thick with rolling pin. cut with 2 1/4 inch cutter. Place biscuits 1/4 inches apart. Butter both sides of biscuits. Bake at 400 º for 15 mins.
