8 medium squash, thinly sliced & halved
1 lg. onion, roughly chopped
salt and pepper to taste
sugar to taste
bacon grease
butter or margarine

Directions:
Directions:
In a heavy skillet, heat bacon grease and margarine. Add squash and onion; simmer over medium heat. Add salt, pepper and sugar. Allow to simmer until squash and onion are tender and liquid is cooked down. Transfer to baking dish and serve.

Variation: Once squash is tender, chop with biscuit cutter. Transfer to a baking dish and bake for 20 to 30 minutes at 350 degrees.

Mama Polly brought a very special lady into our lives. Weezie moved to Marshall to care for Cally when she was seven weeks old, and she was there the day we brought Alex home from the hospital. Weezie was more than a Nanny... she was part of our family. Later, she moved to Arlington with us, just to take care of "her girls." She was a treasure, and every time I make this recipe, I think of Weezie.
