1/2 c. halved walnuts
1/2 c. Champagne
1/2 c. jellied cranberry sauce
1/4 c. minced shallots
1 tsp. Dijon mustard
2 tbsp. Olive oil
6 c. mixed lettuce greens
2 pears, cored and dried
1/2 c. dried cranberries
salt and pepper to taste

toast walnuts on medium heat in a dry skillet for 3 minutes.

In a saucepan mix champagne, cranberry sauce, shallots, Dijon mustard & oil. Whisk together. Set pan over high heat and bring to a boil. Simmer until reduced by 1/3 cup (about 5 minutes). Remove from heat. Season to taste with salt and pepper.

Place greens in a large bowl. Top with pears, toasted walnuts and dried cranberries. Toss with warm champagne vinaigrette just before serving.
