4 (1-inch thick) veal chops
Salt & pepper to taste
6 sprigs fresh sage, chopped, about 4 Tbsp.
1 Tbsp. olive oil
2 Tbsp. butter
1/2 C. dry white wine

Directions:
Directions:
Heat a heavy-bottomed skillet over medium-high heat. Season chops with salt and pepper and rub them each with about 1 Tbsp. of chopped sage. Rub sage into meat on both sides of chops. Add oil to skillet. Melt butter into the oil and add chops to the pan. Cook chops 5 minutes on each side and transfer them to a warm platter to rest. Add wine to the pan and scrape up drippings. Spoon the drippings down over the chops and serve. Serves 4.
