1 lb. boneless chicken breast, cut in bite-size pieces
vegetable oil
salt and pepper
2-10 oz. cans green Chile enchilada sauce
3/4 c. shredded cheddar cheese
6-8 flour tortillas

Directions:
Directions:
Heat oven to 400º. Spray 9 x 13 inch glass baking dish with cooking spray. Season chicken with salt and pepper. Cook in oil in 10-inch skillet until no longer pink. Stir in 2/3 c. enchilada sauce and 1/2 c. cheese until blended and cheese is melted. Spoon chicken mixture onto tortillas; roll up and place seam side down in baking dish. Pour remaining enchilada sauce over top and sprinkle with remaining cheese. Bake 15-20 minutes or until hot and cheese is melted.

I usually don't measure the cheese. I just add until it looks good. Also, we usually serve this with taco rice with corn and refried beans.
