4 large potatoes
2/3 c. butter
2/3 c. flour
6 c. milk
1/2 tsp. salt
1/2 tsp. pepper
4 green onions, chopped and divided
12 slices bacon, cooked and crumbled
1 1/4 c. shredded cheddar cheese
1 - 8 oz. carton sour cream

Directions:

Bake potatoes at 400º for 1 hour or until done.
Cool and cut in half. Scoop out pulp and set aside.
Discard skin.
Melt butter in heavy skillet over low heat. Add flour slowly, stirring continually as you add milk slowly. Cook on medium heat until thick. Add potato pulp, salt, pepper, 2 T. of the green onion, 1/2 c. of the bacon and 1 c. cheese. Cook until heated. Stir in sour cream. Add extra milk to make it the thickness you desire. Serve with remaining cheese, onions, and bacon sprinkled on top.
