1 Qt Milk
1/4 tsp salt
1/2 cup long grained rice, rinsed & drained
1 cup evaporated milk
2 eggs lightly beaten
1 tsp vanilla extract

Directions:
Directions:
In a large saucepan cook milk & salt until heated. Stir in rice. When mixture reaches a boiling point, lower heat and simmer 15 minutes, stirring occasionally. Add raisins & cook until rice is done, about 5 minutes. Add 1/4 cup evaporated milk. Cook a few minutes.
In a mixing bowl, combine eggs, sugar, vanilla, and remaining evaporated milk. Stir some rice mixture into egg mixture. Return this mixture to the one in the saucepan & cook slowly until it thickens a bit. Pour into serving bow, stir pudding often while it cools.
Top with a sprinkling of nutmeg.
P.S. Pour egg mixture in slowly, stirring constantly while doing so. Don't overcook or it will curdle.
