1 c. dried apricots
1 1/4 c. sugar
2 T. shortening
1 egg
1/2 c. orange juice
2 c. flour
2 tsp. baking powder
1/2 tsp. soda

Directions:
Directions:
Chop dried apricots and soak apricots in water for 20 minutes or longer. Cream 1 cup of the sugar and shortening. Add 1 egg, beaten well. Stir in 1/4 c. sugar and orange juice. Add flour, soda, and baking powder.
Drain water off apricots and add to batter with 1/2 c. chopped pecans. Grease and flour pan and bake at 350º for 65 minutes.

This recipe was a specialty of a wonderful cook and long-time resident of Karnes County, Mrs. Clyde Franklin. She was called "Sissie" by all. Her family owned and ran Ruhmann's Store - a hardware and gift shop - on Main Street in Kenedy for many years.
