Sharp cheddar cheese, grated
cream cheese, softened
2 1/2 Tbs. pimientos plus some juice
cayenne
paprika
white pepper
1/2 c.mayo
1 tsp. grated onion

Mix ingredients together. Chill. Serve with Ritz crackers. (if not moist enough, add more mayo)
