1 cup butter, softened
2 1/2 cups sugar
4 eggs
1/2 cup sour cream
2 cups (6-8) mashed bananas

3 1/2 cups flour
2 tsp baking soda
1/2 tsp salt

Chocolate chips, optional

Directions:
Directions:
Cream butter, sugar & eggs. Mix in sour cream and mashed bananas. In a separate bowl, mix flour, soda and salt and add to liquid mixture. Stir until mixed (ignore lumps). Add as many chocolate chips as you like. Fill greased muffin pans to 3/4 full. Bake at 400ºF for 12-17 minutes.

I like to substitute up to half the white flour with whole wheat. Also, blueberries instead of chocolate chips is great too.
