1 cup yellow cornmeal (Pioneer or Lamb's)
2 tsp. baking powder
1/3 cup flour
1/2 tsp. salt
2/3 cup buttermilk
1 egg, beaten
3 tbsp. vegetable oil

Directions:
Directions:
Preheat oven to 450 degrees. Oil and heat an 8 or 9 inch skillet. Combine cornmeal and other dry ingredients in a bowl. Add milk and egg; stir. Add oil and mix thoroughly. Pour into prepared pan. Bake 20 or 25 minutes or until golden brown.

This is so good with real butter and served with fresh vegetables, especially purple hull peas!
