1 (10 lb.) fresh turkey
dry mustard
Worcestershire sauce
olive oil
salt and pepper
vinegar
1 onion, cut in half
celery
parsley
bacon
1 stick butter, very cold and hard
2 cups chicken broth

Directions:
If using a frozen turkey, thaw well. Prepare turkey 1 day before cooking. Put cut butter pieces under the skin all over the breast. Rub the bird inside and out with a paste made of dry mustard, olive oil, Worcestershire sauce, salt, pepper and a little vinegar in the proportions to make a soft paste. Place onion, celery and parsley inside the bird. Place in a roasting pan. Across the breast, lay 2 pieces of bacon. Soak cheesecloth in olive oil, and lay over turkey. Refrigerate until ready to cook. Before placing in oven, pour chicken broth in pan. Bake about 30 minutes per pound at 300 degrees. Baste once or twice during cooking. This browns the turkey beautifully and makes it completely tender when you eat it.

Gravy: Boil the neck and giblets in about 5 cups of water with celery, onion, salt, and pepper until done. Take a tbsp. of grease and one tbsp. of flour and make a roux by browning the flour. Add one chopped onion, 1 piece of chopped celery, some chopped parsley, a bay leaf, salt and pepper to taste. Saute this until soft and add the stock to this roux. Let it simmer down to make the gravy for the turkey. This can be increased.
