2 med. eggplants, sliced crosswise
cooking oil
flour
1 egg, beaten
1 lg. jar spaghetti sauce
1/2 cup grated Parmesan cheese
8 slices Mozzarella cheese
spaghetti or linguine (optional)

Directions:
Directions:
Dip eggplant into egg and then flour. Saute a few slices at a time in lg. skillet with oil. Cook until brown on outside and fork tender. Repeat until all are sautéed. Lightly grease a 2 qt. casserole dish. Arrange half of the eggplant then top with spaghetti sauce, Parmesan cheese, and Mozzarella. Repeat layers. Bake 30 or 40 minutes until brown. Serve as is or over pasta.
