Directions:
Brown beef and onion; drain. Place cubed Velveeta in a microwave safe bowl, cover with plastic wrap, and heat until somewhat melted. Combine all other ingredients (except meat & onion) with the cheese. Continue to heat in the microwave until cheese is melted; stir until well-blended. Remove approximately 1 1/2 cups of cheese mixture and reserve for topping. Then add meat and onion to the cheese mixture and stir well. Fill tortillas with meat and cheese mixture. Roll and place seam side down in greased baking dish. Top with remaining cheese mixture. Cover with foil, and bake in a 350 degree preheated oven for 30 to 40 minutes. Remove the foil for the last 5 to 10 minutes.

Personal Notes:
Parker and Molly Kate, this is your Aunt Gayle's recipe and an Echols family favorite. It has been one of Molly Kate's SFA friends' most requested dishes when they come to Lufkin for a home cooked meal!
