Dora's Enchiladas Recipe

Ingredients: 1 lb. ground beef 1/2 cup chopped onion 1 pkg. taco seasoning 1 can refried beans 1/2 cup beef broth 1 (10 oz.) can enchilada sauce 1 small jar mild taco sauce 10 oz. mild Cheddar cheese, grated 15 small to medium flour tortillas

Directions:Brown and drain onion and beef. Stir in taco seasoning; add refried beans, beef broth, and 1/2 cup of the enchilada sauce. Simmer 10 to 15 minutes. Mix the remaining enchilada sauce with the taco sauce and set aside. Fill each tortilla with meat mixture and grated cheese. Roll up and place seam side down in greased baking dish. Pour the sauce mixture over the top and sprinkle with grated cheese. Cover with foil and bake in a 375 degree oven for 15 to 20 minutes or until bubbly hot. If you make these ahead and store in refrigerator, cook time will increase, and lower oven to 350 degrees. |

Notes: My sweet friend, Dora Whatley, gave me this recipe years ago when we both lived in Kildare. Dora and I were pregnant at the same time with Walt and Molly Kate. Due to recipes such as this, Dora and I spent many evenings walking together for exercise!
