6 medium tomatoes, chopped
1 cucumber, peeled and chopped
1 cup celery, diced
cup orange pepper, chopped
cup yellow pepper, chopped
1 medium sweet onion, sliced
cup cilantro, chopped
2 Tbsp basil leaves, chopped
2 Tbsp balsamic vinegar
1/8 cup extra virgin olive oil
Salt & pepper to taste
Pine nuts

Mix all ingredients together. Let chill at least one hour before serving.
