2 cups or more diced chicken
3/4 cups finely chopped celery
1 cup cooked rice
1 small can sliced water chestnuts
1 cup Hellmann's mayonnaise
1 can cream of chicken soup
1 tbsp. lemon juice
1 small pkg. sliced almonds
3/4 cup cornflakes
1/2 stick melted butter

Directions:
Directions:
Mix chicken, celery, rice, & water chestnuts. Mix with mayonnaise, soup, lemon juice and almonds. Sprinkle top with cornflakes, and drizzle with butter. Bake at 350 degrees for 30 minutes.

This is a delicious recipe given to me by my dear, dear friend, Joan Anderson. A great menu is Hot Chicken Salad, Pineapple Bake, and Spinach Bread. This is a great combination of flavors and makes for a beautiful plate.
