3 tablespoons butter
2 tablespoons flour
3 cups of milk
2 1/2 teaspoons of salt
1 1/2 cups shredded old cheddar
6 cups of thinly sliced potatoes
1 onion thinly sliced

Directions:
Directions:
In a buttered casserole dish arrange 1/2 the potatoes and onions. In a saucepan melt butter, add flour and cook for a minute...do not let it brown. Blend in milk and cook until smooth and thick. Take off heat and stir in 1 cup of cheese. Pour half cream mixture over potatoes. Arrange the rest of the potatoes and onions and top with the remaining cream mixture. Bake 1 hour at 375 degrees. Top with remaining cheese and return to oven just until cheese is melted. This method keeps the scalloped potatoes from curdling.
