2 c boiling water
3 tbsp butter
3 tbsp shortening
2 c potato flakes
1/4 tsp baking powder
2 tsp salt
1/2 c cold milk
1 1/2 - 2 c flour

Directions:
Directions:
Mix water, butter, shortening, and potato flakes; add baking powder, salt, and milk and mix thoroughly. Refrigerate overnight. Add 1 1/2 c flour to mixture and mix well. Use remaining flour to roll dough into lefse rounds. Bake on lefse grill until browned on one side; flip and bake until brown on second side. Remove from grill, fold in half and cover with clean dish towel. Stack next baked lefse rounds on top of prior lefse and continue to cover with towel. When cool, fold each lefse in quarters, stack 3-4 lefse together and wrap in plastic wrap. Can be served immediately or frozen for future use. To serve cut Lefse rounds into thirds; butter and sugar as desired; and roll into scroll or lay flat on serving tray.
