1. Substitute melted butter for oil. (If the recipe calls for 1/2 cup vegetable oil, then use 1/2 cup melted butter instead. Remember, butter not margarine.

2. Immediately upon removing a hot cake from the pan, wrap it securely in plastic wrap. This allows the heat to absorb into the cake instead of escaping.
