3 1/2 cups skim milk
1 tsp salt
1 1/4 cups quick cooking grits
4 ounces cooked ham diced
3/4/cup low-fat Monterey Jack cheese/ shredded
2 tbsp grated Parmesan cheese
1 pickled jalapeņo - minced
2 large eggs
3 large egg whites

Directions:
Directions:
Preheat oven to 325. Grease shallow 2 quart casserole dish. In a heavy 3 quart saucepan heat 1 1/2 cups milk, 2 1/4 cups water, and salt to boiling over medium -high heat. Gradually stir in grits, beating with a wire whisk. Cover and simmer over low heat for 5 minutes, stirring occasionally. Remove from heat and stir in ham, cheeses and jalapeņo.

In large bowl whisk eggs, egg whites and 2 cups milk. Gradually add grits to egg mixture.

Pour into casserole and bake 45-50 minutes until top in set and edges are lightly browned. Let stand 10 minutes before serving.
