1 c. instant grits
Salt and pepper
1/4 c. (1/2 stick) butter
2 c. shredded sharp Cheddar cheese
1 lb. shrimp, peeled and deveined, left whole if sm. or roughly chopped if med. or lg.
6 slices bacon, chopped into tiny pieces
4 tsp. fresh lemon juice
2 T. fresh parsley, chopped
1 c. thinly sliced green onions, white and green parts
1 large clove garlic, minced

In a medium saucepan, cook instant grits according package directions. Add salt and pepper to taste. Remove from heat and stir in butter and cheese. Keep covered until ready to serve. Rinse shrimp and pat dry. Fry bacon in a large skillet until browned and crisp, then drain on a paper towel. Add shrimp to bacon grease in skillet and sauté over medium heat just until they turn pink, about 3 minutes. Do not overcook! Immediately add lemon juice, parsley, green onions and garlic. Remove skillet from heat. Pour grits into a serving bowl. Pour shrimp mixture over grits and garnish with bacon bits. If you are serving this as an appetizer, spoon 1/4 cup grits onto a bread or salad plate. Top with 1/4 cup shrimp mixture. Garnish with a sprinkling of crisp bacon bits and serve immediately. Serves 8 as an appetizer or 4 as a main course.
